面龟”("mi ku")

(A)500克面粉,150克细沙糖,(500g plain flour, 150g sugar)

(B)4克酵母,230克水,(4g instant yeast, 230g water)

(C)33克白油,3克发粉,(33g shortening, 3g baking powder)

(D)粉红色素少许(涂面用)(pink colouring for glazing)

做法:


  1. 将 (A)放入搅拌机内拌匀,加入(B)拌打成团再加入(C)继续搅打10分钟成一柔软光滑有弹性。Combine (A) mix well. Add in (B) beat with medium speed till form a dough. Add in (C) continue beating for 10 mins until dough is soft and elastic to the touch.

  2. 分 割成8个小面团。搓圆揉成长形,再把面团中间收紧成细腰, 放在蜡纸上,扫上红色素,放入蒸笼,发酵30-40分钟。Divided into 8 portions. Shape into long strips and shape the middle part into a slight inward curve. Place on a pcs of wax paper. Glaze surface and arrange into steamer and proof for 30-40 mins.

  3. 大火蒸12-15分钟。 Steam on high heat for 12-15 mins.
